I don’t know for you, but here, the weather is getting better and better, which motivates me for new recipes !
Today is my monthly day off so I have plenty of me time including sewing, doing yoga, learning photography and of course, COOKING and EATING !
After my morning full of activities, I needed energy for my -also full- afternoon.
Here is the recipe I came with :
Super protein salad with Tangerine dressing :
For 1 serving :
- 50gr uncooked lentils
- 25gr uncooked quinoa
- 25gr uncooked chickpeas
- 1 medium carrot
- 1 small avocado
For the dressing :
- 1 clementine
- 2 spoons of olive oil
- 1 spoon of balsamic vinegar
- 1 pinch of mustard
- Cook the lentils, the quinoa and the chickpeas. Grate the carrot and slice the avocado.
- Mix all together.
- Make the dressing : squeeze the clementine and put the juice in bowl, then add the oil, the vinegar, and the mustard, mix together, pour in the salad, and you’re done !
