Staying at my dad’s house for holidays, he took advantage of my venue to ask me to cook things he didn’t know how to do himself. One of his request was rice pudding. It’s one of his favorite dessert. I don’t really like it but I wanted to please him ! And as I had extra almond milk from Christmas cake recime, I decided to go for a vegan recipe, inspired by this one . Here it is !
Vegan Rice Pudding :
For 4 servings :
- 625ml almond milk
- 95gr round rice
- 50gr of sugar
- Vanilla extract
- Rinse the rice.
- In a pot, make the milk boil, then add the rice. Low down the heat, but the milk must still make bubbles without coming out of the pot. With a wooden spoon, never stop mixing for 25min. Be careful not to burn the rice and the milk into the pot.
- When cooking is done, mixture is really creamy. Out of the heat, you can add vanilla extract according to your taste, and the sugar.
- Pour in ramekins and you’re done ! You can eat it hot or cold.
It’s not looking good but the taste is !
