Cooking recipe #24 – Perfect Vegan Mashed Potatoes 

Sometimes, simple recipes are the best, when you have no time, or not a ton of ingredients in the fridge, or simply when you want to enjoy good & simple things !

This morning, I woke up craving for a dish my mom makes perfectly: mashed potatoes. It’s really like a Madeleine de Proust to me !

Making a good purée is simple, but even more simple with those few tips I’ll share with you today !

Perfect mashed potatoes :

For 4 servings :

  • 1kg of potatoes
  • 12.5cl of any milk (vegan or not, your choice !)
  • salt, pepper, nutmeg

1/ Peel the potatoes and cut them into medium slices (not cubes, slices !)

2/ Put the potatoes in a big pot, then fill it with cold water.

3/ Make the water boil and let it like this for 40min.

4/ When potatoes are ready (you can check by sticking a knife into potatoes, it must be really soft), remove the water, and mash the potatoes with a fork or like (but never food processor !).

5/ Warm up the milk, it must be at least room temperature, and pour the milk into potatoes, mixing with the fork.

6/ Once the texture is fine, add salt, pepper, nutmeg.

And it’s ready ! Perfect with a slice of ham for a little taste of past childhood – also perfect with roadster veggies or other vegan options !

Carb = 61gr // Proteins = 7gr // Fats = 1gr
