I’m so sad that summer is almost finished here. I cannot complain because it lasts more than in other places but…! You never have enough beach, sun, and outside drinks !
Here is one on the last summer recipes I guess. So easy, so simple, so refreshing, and only 2 ingredients !
I’ll show you today my magic soup :
Cold Zucchini Soup :
For 2 servings :
- 2 zucchinis
- 40g of cheese type Philadelphia / Saint-Morêt/Kiri
- water, salt, pepper
- herbs, spices of your choice (optional)
1/ Cut the zucchinis into slices and make it boil with water like 20minutes.
2/Put the zucchinis into the food processor, with a little amount of juice. Don’t throw the juice, it can be useful later ! Add more or less water, depends on you like thin or thick soup. Add the cheese, proceed again, add salt, pepper (herbs & spices), and you’re done !

Carb = 7gr // Proteins = 3gr // Fats = 6gr
If you want to eat it cold, make sure to put the soup few hours in the refrigerator before eating. Hot or cold, both versions are really good !
