During my holidays, I spent half time with and on my BF’s flat, which of course, had boy’s kitchen, means no space, no spices, nothing in the fridge nor in the cupboards! So happy today to return in my own kitchen, cooking my beloved little veggies ! I had yellow zucchinis to eat before leaving to my parents for a week and it was ages since I didn’t had salted flan or something like this. I decided to go ahead with some sweet & salty zucchini clafoutis with goat cheese.
Here’s the recipe :
Zucchini Clafoutis :
For 4 servings :
- 2 medium (yellow) zucchinis
- 2 eggs
- 200gr goat cheese
- 40gr flour,
- 12.5cl rice milk
- 1 garlic clover
- olive oil, salt, pepper, herbes de Provence, honey, nutmeg
1/ Slice the zucchinis, along with garlic. Put it in a pan with olive oil, make it heat high temperature, until zucchinis have no water in it. When it’s done, add a little splash of honey and herbes de Provence, according to your taste.
2/ Pre-heat oven, 200°C.
3/ In a large bowl, mix the eggs, then add the cheese, the flour, and the milk. When it’s homogeneous, add zucchinis.
4/ Still according to your taste, add salt, pepper, and nutmeg. Put the bate in a plate, and put the plate in the pre-heated oven for 35min at 200°C.

Unfortunately we didn’t had some salad with cherry tomatoes to eat with but it would have been perfect !
