Cooking recipe #8 – Coconut Bites

There are some recipes that you enjoy to make, but after you always have some leftovers and you don’t know how to use them.

For example, I really enjoy good old mayonnaise with avocado. But what to do with whites once you used the yolks? I’ve got the answer for all the sweet tooth out there !

Coconut bites :

For approx. 18 bites :

  • 3 egg whites
  • 150g brown sugar
  • 150g coconut shred


1/ Mix all the ingredients in a pot. Make it heat, but low temperature, continue mixing.

2/ When the dough comes of the walls of the pan (it’s very quick, between 2 and 5min.), put it in a piping bag, or, if you don’t have, you can use teaspoon. On a plate covered with baking paper, start to make small balls (3cm diamter), until you’re out of dough.

3/ Make it heat in the oven for 20 min at 180°C. Bites must hane nice golden color.
