Cooking recipe #3 – Endives’ Soup

One of my tips to avoid wasting fresh vegetables is to make a good soup. You can do soup with almost everything, possibilities are endless, you can freeze it very easily and it’s good for health !

You just need some vegetables, water, and a good blender. Too bad soup season is over !

So here is my anti-waste recipe of the day :

Endives’ Soupe


Calories intake by serving  (without dressing) = 207kcal
Carb = 40gr // Proteins = 8gr // Fats = 1gr

For 2 servings :

  • 4 endives
  • 2 carrots
  • 1 onion
  • 1 potatoe
  • salt, pepper
  1. Peel all the veggies and cut it in small pieces.
  2. Put everything in large pot, make sure to add sufficiant amount of water, water must overlay the vegetables.
  3. When the water is boiling, count 20min of cooking.
  4. Mix, add some salt & pepper to your convenience, and it’s ready !

You can add DIY croutons and soy cream for -vegan- extra sweetness.
